A Few of Your Favorite Things!

Copycat Restaurant Recipes

I love to copycat restaurant recipes!  I am NOT the world's best cook!   In fact, I could live on bean burritos and instant mashed potatoes if my sweet husband would let me!  But once in awhile I get a crazy urge and want to try something new.  And I love trying copycat recipes!  Just the satisfaction of making something that tastes...wonderful!

So, here are a few of my tried and true favorites.  I've found some of them from various parts of the internet or pinterest.  And some I've had in my recipe book for years so I don't know who to credit for them.  But, I will credit them where I am able..and thanks to those wonderful creative cooks that come up with these great ideas!

Hard Rock Cafe

Baked Potato Soup

copycat restaurant recipes

I've made this recipe for years!  I do use turkey bacon when I make it because I'm not a pork fan-and I used almond milk this time because...heavy whipping cream sticks to me like glue!  But the recipe is amazing with the tabasco and the garlic!  Amaaaazing!

Chicken Enchilada Soup

copycat restaurant recipes

This is a great copykat recipe of some terrific soup!  Of course, anything with cumin in it makes me happy!

Masa Harina can be found in the flour section of the grocery store or in the Mexican Food Section.

  • 1/4 cup vegetable oil
  • 1/8 cup chicken base
  • 1 1/2 C diced yellow onions
    1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp minced garlic
  • 1/4 tsp cayenne pepper
  • 1 cup Masa Harina
  • 1 can crushed tomatoes
  • 1/4 lb processed American cheese, cubed
  • 1 1/2 lb cooked chicken, cubed or pulled

Copycat Restaurant Recipes
  1. In a large pot, place oil, chicken base, onion and spices. Saute the onions until they are clear-about 5 minutes.
  2. In a large container, combine Masa Harina with 1/2 quart water or chicken broth.
  3. Stir until all of the lumps are dissolved.
  4. Add to sauteed onions & bring to a boil. Once mixture starts to bubble, continue cooking 2-3 minutes stirring constantly. This will eliminate any raw taste from the Masa Harina.
  5. Add the remaining 1 1/2 quarts of water to pot.
  6. Add tomatoes and let the mixture return to boil-stir occasionally.
  7. Add cheese to soup. Cook, stirring occasionally until cheese melts.
  8.  Add chicken, heat through.
